Brasserie Flo Nice

 

In 1897, the name of this theatre hall was the Folies-Bergère, in 1901, the Petit Casino de Nice or the Kursaal Casino, from 1908 to 1922 the Trianon Casino and finally in 1923, the Nouveau Casino. But it is now fine cuisine that has upstaged the players in this gourmet's theatre.

When the citizens of Nice dine in the rue Sacha-Guitry, they are in no way surprised to be part of a variety show.

In this establishment, the kitchen is actually sited on stage and at the beginning of the show, the red velvet curtain rises to reveal the dishes being prepared under the gaze of the audience who are then served in the theatre pit.

The dining room is over 10 metres high and the dress circle runs around the sides – each meal is a gala affair!

This was the idea of Jacques Maximin, the former star chef of the hotel Négresco, who took over this theatre to open his own restaurant at the end of the 1980s.
With the arrival of Flo in 1991, the decor was kept virtually unchanged, the perfect scene for the Mediterranean cuisine with an Asian note introduced by chef, Bertrand Comele, following his long sojourn in Japan.
